A favourite recipe

this is something I have to share with  you - one of my favourite recipes.  it is SO yummy, you have to try it!  Let me know what you think if you do...
I usually make a batch of this and spread it on both sides of a salmon fillet then pan fry and have a big spoonful of it served with the salmon, on a potato and sweet potato mash with steamed snow peas and asparagus - YUM

Coriander and Cashew Pesto
3/4 cup fresh coriander leaves, tightly packed
1 level tsp sambal oeleck (chilli paste)
2 cloves garlic, crushed
1/2 cup cashews
1 tsp grated lime zest
1 tbs grated orange zest
2 1/2 tbs fresh lime juice
1/2 tsp sugar
1 tsp white pepper
5 tbs light olive oil
1 tbs rice vinegar
1 tbs tamari soy sauce
salt to taste

Place all in a food processor to make a paste.  I usually make a double batch.  it's also great spread on Chicken fillets or mixed through a wok full of green prawns and scallops.  


My favourite Christmas Card

This is my fave Christmas card I received this year - all the way from the UK, from a friend I met in Thailand 16 years ago.  It's actually a Unicef card and I love the design

Beatles Coasters

These are a Christmas present - some coasters made from an old 1980s high school music textbook, they have about 10 layers of lacquer so should be pretty tough...  I usually make coasters from old atlas pages but the possibilities are endless!!

New Handbags

I finally got around to using this laminated cotton.  It has a feel like oilcloth and is waterproof so can be wiped clean.  I made 2 handbags, with slightly different strap variations. One has the straps sewn into the bag and the other has them attached to the outside.  Both have a long strap so you can wear the bag across your body as well as over the shoulder and have magnetic closures.  .  The fabric is 'Carnival' by Michael Miller.  Both bags have a matching coin purse with wrist strap.  They both also have 2 internal cotton pockets and a keyring with clip so you can attach your keys and always find them!! I'm going to put these in the Pod Collective shop for $59.95 including the matching purse - a bargain!! 


I have slowed down a bit lately on making stuff....  have been painting Max's room and other things so haven't had a lot of new things to put on the are a few pics of what's in the Pod Collective shop at the moment - my website/online shop has started getting busier which is great - most of my stock is in the shop at Boyne Island but I still have quite a few things in the online shop
